Bacon Jam #2
- 1 lb Bacon
- 2 Red onions
- 1/2 cup Brown sugar
- 1/4 cup Balsamic vinegar
- Slice bacon in to small thin strips and dice onions, cook bacon until crisp, add onion and cook until golden brown—lower heat to low and cook onions and bacon covered for 30 minutes.
- After allowing to cook for 30 minutes covered, add brown sugar and balsamic vinegar and simmer until thickened (about 20 minutes).
- Place in jar and let cool. Cover and refrigerate. Great with toast, on a burger, or on a meat platter.
