Lentil Salad

Ingredients
  

  • 4 cups Lentils
  • 16 cups Water
  • 3 ears Corn grilled
  • 3 cloves Garlic
  • 1 cup Diced celery
  • 1 cup Diced yellow onion
  • 1 bunch Chopped parsley
  • 1/2 cup Chopped chives
  • 1 tbsp Olive oil
  • 1 tbsp Apple cider vinegar
  • Salt & pepper to taste

Instructions
 

  • In large soup pot, add water, lentils, garlic and corn. Bring to boil, reduce to simmer and cover for 20 minutes.
  • Remove Garlic, allow to cool and chop.
  • Remove corn and cut kernels from cob.
  • Strain lentils, combine with all other ingredients (including garlic and corn) in large bowl. Mix to combine.
