Lentil Salad

Lentil Salad
- 4 cups Lentils
- 16 cups Water
- 3 ears Corn grilled
- 3 cloves Garlic
- 1 cup Diced celery
- 1 cup Diced yellow onion
- 1 bunch Chopped parsley
- 1/2 cup Chopped chives
- 1 tbsp Olive oil
- 1 tbsp Apple cider vinegar
- Salt & pepper to taste
In large soup pot, add water, lentils, garlic and corn. Bring to boil, reduce to simmer and cover for 20 minutes.
Remove Garlic, allow to cool and chop.
Remove corn and cut kernels from cob.
Strain lentils, combine with all other ingredients (including garlic and corn) in large bowl. Mix to combine.
