Ingredients
  • 1 ½ Cups flour
  • 1 ¼ Cups Yellow cornmeal
  • ¾ Cups sugar
  • ½ tsp. Baking Powder
  • ½ tsp. baking soda
  • ½ tsp. salt
  • 2 Large eggs
  • ½ Cup olive oil
  • 1 Cup buttermilk

Instructions
  1. Preheat oven to 350F. Spray 9x5-in. loaf pan with cooking spray.
  2. In a large bowl combine; flour, yellow cornmeal, sugar, baking powder, baking soda & salt.
  3. Mix eggs, olive oil & buttermilk in a small bowl.
  4. Add egg mixture, 1 cup frozen corn, thawed, and 1 Tbsp. chopped fresh sage to dry ingredients, stir to combine. Pour batter into pan. Bake 1 hour. Serve with honey.
