Swedish Gravy
  • 1EA Shallot Minced
  • 2tbs butter
  • 2tbs flour
  • 3tsp Worcestershire
  • 1/2 cup Heavy cream
  • 1/2 cup whole milk
  • 1/4cup Sour Cream
  • 1 tsp Ground Allspice
  • 1tsp ground nutmeg
  • To Taste Salt and Pepper
  1. Melt butter, add shallots and cook until translucent (about 5 minutes)
  2. Add flour to create a roux and cook, stirring constantly until light brown. At this point it will develop a slight toasted nut aroma.
  3. Add the remaining ingredients and bring to a simmer. Let reduce until thickened slightly, stirring occasionally.
