Wisconsin White Cheddar Beer Soup

Ingredients
  • 1 Medium onion, diced
  • 5cloves Garlic, diced
  • 3sticks butter
  • 2.5cups flour
  • 12cups chicken stock
  • 4cups Heavy cream
  • 5cups Shredded white cheddar cheese
  • 3cups Shredded Swiss cheese
  • Salt and pepper to taste
Instructions
  1. Sauté onions in butter until translucent in color.
  2. Add garlic and cook for an additional minute.
  3. Add flour and stir, cooking until golden brown.
  4. Add chicken stock, slowly whisking liquid into flour mixture.
  5. Add heavy cream and reduce heat to simmer.
  6. Add cheese, stirring until melted. Once cheese is melted, add beer.
  7. Finish with salt and pepper to taste.
