Boil a pot of water and add the tomatoes. Boil for about 30 to 60 seconds, or until the skins start to peel back.
Remove the tomatoes with a spoon and drop them into the ice bath. After they've cooled in the ice bath (about 1 minute), take them out and peel tomatoes.
Dice tomatoes and add to the red peppers and shallots in a sauté pan over medium heat. Cook for 5 minutes stirring constantly.
Combine all ingredients in blender and blend smooth. Can be used immediately or frozen for a later application.
