Roasted Tomato Sauce

Ingredients
  

  • 5 Roma tomatoes
  • 1 can Roasted red peppers
  • 1 Shallot
  • 1 Lime
  • 1 tbsp Garlic powder
  • 1 tbsp Cayenne powder
  • 2 tbsp Paprika
  • 1/2 cup Sugar

Instructions
 

  • Boil a pot of water and add the tomatoes. Boil for about 30 to 60 seconds, or until the skins start to peel back.
  • Remove the tomatoes with a spoon and drop them into the ice bath. After they've cooled in the ice bath (about 1 minute), take them out and peel tomatoes.
  • Dice tomatoes and add to the red peppers and shallots in a sauté pan over medium heat. Cook for 5 minutes stirring constantly.
  • Combine all ingredients in blender and blend smooth. Can be used immediately or frozen for a later application.
