- 2 Cucumber
- 2 cup Champagne vinegar
- 2 cup Water
- 2 tbsp Pickling spice
- 1 tbsp Salt
- 1 tbsp Sugar
- Slice cucumbers thinly on mandolin or by hand, and salt. Let rest for 30 minutes.
- Rinse and place in container.
- Combine remaining ingredients in saucepot and bring to boil.
- Strain mixture onto cucumbers and cool.
