Tropical Green Salad
- 2 cup Spinach leaves
- 1 cup Arugula
- 1 Romaine head chopped
- 1 Orange peeled and chopped
- 1 Mango peeled and chopped
- 1 cup Pineapple peeled and chopped
- 1/2 cup Red onion sliced
- 1/2 cup Red bell pepper sliced
- 1/2 cup Toasted macadamia nuts
- Combine all ingredients in a bowl with ½ C of tropical vinaigrette and place on 4-6 plates.
- Place grilled chicken thighs on salad and drizzle with leftover jerk rub.
