Swedish Gravy

Ingredients
  

  • 1 EA Shallot Minced
  • 2 tbs butter
  • 2 tbs flour
  • 3 tsp Worcestershire
  • 1/2 cup Heavy cream
  • 1/2 cup whole milk
  • 1/4 cup Sour Cream
  • 1 tsp Ground Allspice
  • 1 tsp ground nutmeg
  • To Taste Salt and Pepper

Instructions
 

  • Melt butter, add shallots and cook until translucent (about 5 minutes)
  • Add flour to create a roux and cook, stirring constantly until light brown. At this point it will develop a slight toasted nut aroma.
  • Add the remaining ingredients and bring to a simmer. Let reduce until thickened slightly, stirring occasionally.
