Tomato Basil Bisque

Ingredients
  

  • 3 tbsp olive oil
  • 2 tbsp Shallots chopped
  • 2 tbsp garlic chopped
  • 4 lbs Roma Tomatoes chopped
  • 2 tbsp sugar
  • 1 tbsp kosher salt
  • 1 tsp black pepper
  • 2 tbsp Tomato Paste
  • 1/4 cup Fresh Basil chopped
  • 2-3 cups Stock Vegetable or chicken
  • 2 tbsp cream

Instructions
 

  • Heat olive oil and sauté shallots and garlic.
  • Add chopped tomatoes and heat 5 minutes.
  • Add sugar, salt, pepper, tomato paste & stock.
  • Simmer 30 minutes.
  • Puree 1/2 the basil with cream in a blender until smooth. Add to bisque.
  • Garnish with remaining basil.
