Swedish Pickles

Ingredients
  

  • 2 Cucumber
  • 2 cup Champagne vinegar
  • 2 cup Water
  • 2 tbsp Pickling spice
  • 1 tbsp Salt
  • 1 tbsp Sugar

Instructions
 

  • Slice cucumbers thinly on mandolin or by hand, and salt. Let rest for 30 minutes.
  • Rinse and place in container.
  • Combine remaining ingredients in saucepot and bring to boil.
  • Strain mixture onto cucumbers and cool.
