Swedish Gravy
- 1 EA Shallot Minced
- 2 tbs butter
- 2 tbs flour
- 3 tsp Worcestershire
- 1/2 cup Heavy cream
- 1/2 cup whole milk
- 1/4 cup Sour Cream
- 1 tsp Ground Allspice
- 1 tsp ground nutmeg
- To Taste Salt and Pepper
Melt butter, add shallots and cook until translucent (about 5 minutes)
Add flour to create a roux and cook, stirring constantly until light brown. At this point it will develop a slight toasted nut aroma.
Add the remaining ingredients and bring to a simmer. Let reduce until thickened slightly, stirring occasionally.
